Cel\u00fd p\u0159\u00edb\u011bh Rustic Jerky se za\u010dal ps\u00e1t tak, \u017ee jsme se potkali s m\u00fdm obchodn\u00edm par\u0165\u00e1kem Philem, on ochutnal moje jerky a hned jsme se za\u010dali v\u00e1\u017en\u011b bavit o tom, jak ho dostaneme k lidem.<br \/>\nKdy\u017e jsme Rustic Jerky uv\u00e1d\u011bli na trh, sebejist\u011b jsme to komunikovali jako zdrav\u00e9 j\u00eddlo, vlastn\u011b takov\u00e9 superfood. Je to jeden z m\u00fdch obvykl\u00fdch recept\u016f a jde o tak v\u0161estrannou marin\u00e1du, \u017ee jsem ji pou\u017eil i na jerky. Kamar\u00e1di, kte\u0159\u00ed ochutnali, mi to za\u010dali nesm\u00edrn\u011b chv\u00e1lit.<\/p>\n<p><span style=\"text-decoration: underline;\">JAK V\u00c1S NAPADAJ\u00cd TY CHU\u0164OV\u00c9 KOMBINACE?<\/span><\/p>\n<p>Ka\u017ed\u00e1 z na\u0161ich p\u0159\u00edchut\u00ed p\u0159i\u0161la svou vlastn\u00ed cestou. Nap\u0159\u00edklad receptura pro Smokin\u2019 Ghost vznikla z m\u00e9 ko\u0159en\u00edc\u00ed sm\u011bsi na pulled pork (dlouho pe\u010den\u00e9 nebo konfitovan\u00e9 vep\u0159ov\u00e9 maso, kter\u00e9 se n\u00e1sledn\u011b natrh\u00e1 na vl\u00e1kna, pozn. red.).<\/p>\n<p>P\u0159edstavil jsem tuhletu p\u0159\u00edchu\u0165 p\u0159\u00e1tel\u016fm tak, \u017ee jsem ud\u011blal experiment\u00e1ln\u00ed jerky z klokan\u00edho masa. P\u0159\u00edchu\u0165 a p\u00e1livost jim sedla, ale z klokana p\u0159\u00edli\u0161 nad\u0161en\u00ed nebyli, tak\u017ee jsem se rozhodl vyrobit norm\u00e1ln\u00ed hov\u011bz\u00ed jerky a Smokin\u2019 Ghost je od t\u00e9 doby a\u017e dodnes na\u0161\u00edm bestsellerem!<\/p>\n<p>A Habanero &amp; Lime vznikla jako pikantn\u00ed pivn\u00ed hov\u011bz\u00ed jerky (kter\u00e1 byla mimochodem moje nejobl\u00edben\u011bj\u0161\u00ed), ale p\u0159i v\u00fdrob\u011b n\u00e1m d\u011blalo probl\u00e9my pivo. Tak jsme ho z receptury vyhodili a v\u0161echno ostatn\u00ed nechali. A ono to v\u00fdborn\u011b zafungovalo. P\u016fvodn\u00ed chu\u0165 si m\u016f\u017eete vyzkou\u0161et, kdy\u017e hod\u00edte kousek Habanero &amp; Lime do piva. Dostanete pikantn\u00ed pivn\u00ed jerky. Jedinou v\u00fdjimkou je zat\u00edm Jamaican Jerky Reaper, kterou jsme ud\u011blali jako limitovanou edici na letn\u00ed festivaly. Tahle sm\u011bs ko\u0159en\u00ed je od na\u0161ich dobr\u00fdch kamar\u00e1d\u016f z ChilliSOS, kte\u0159\u00ed prod\u00e1vaj\u00ed om\u00e1\u010dky a ko\u0159en\u00ed. Jakmile jsem tenhle mix poprv\u00e9 ochutnal, v\u011bd\u011bl jsem, \u017ee z n\u011bj pot\u0159ebuju vyrobit jerky. A ono to perfektn\u011b sedlo.<\/p>\n<p>Ale m\u00e1me spoustu dal\u0161\u00edch unik\u00e1tn\u00edch p\u0159\u00edchut\u00ed, kter\u00e9 chceme uv\u00e9st d\u00edky na\u0161emu pokra\u010duj\u00edc\u00edmu r\u016fstu.<\/p>\n<p><span style=\"text-decoration: underline;\">M\u016e\u017dETE POPSAT PROCES V\u00ddROBY JERKY?<\/span><\/p>\n<p>Nakr\u00e1j\u00edme maso z hov\u011bz\u00ed k\u00fdty na dlouh\u00e9 prou\u017eky a marinujeme je 24 hodin, aby maso pln\u011b nas\u00e1klo marin\u00e1du a taky tro\u0161ku zk\u0159ehlo. Proces su\u0161en\u00ed prov\u00e1d\u00edme hork\u00fdm vzduchem p\u0159i teplot\u011b, kter\u00e1 je dost vysok\u00e1 na to, aby bylo jerky bezpe\u010dn\u00e9 ke konzumaci, ale zase ne tak vysok\u00e1, aby maso \u201euva\u0159ila\u201c. Doba su\u0161en\u00ed se pohybuje od 6 do 8 hodin (ka\u017ed\u00e1 p\u0159\u00edchu\u0165 to m\u00e1 jinak), dokud nen\u00ed maso \u00fapln\u011b vysu\u0161en\u00e9. Ano, mohli bychom d\u011blat jerky z levn\u011bj\u0161\u00edch parti\u00ed, ze zmra\u017een\u00e9ho masa od velkododavatel\u016f a velkoobchodn\u00edk\u016f a m\u011bli bychom z toho v\u011bt\u0161\u00ed zisk. Ale to bychom se dostali na m\u00edle daleko od toho, co jsme si p\u0159edsevzali \u2013 od podpory lok\u00e1ln\u00edch dodavatel\u016f. Spole\u010dn\u011b s t\u00edm, jak rosteme, rostou i oni. A to je skv\u011bl\u00e9! A krom\u011b toho \u2013 zamra\u017een\u00ed m\u011bn\u00ed strukturu masa i jeho chu\u0165 a to nen\u00ed nic pro n\u00e1s.<\/p>\n<p>Zv\u00ed\u0159ata jsou chov\u00e1na eticky a udr\u017eujeme dobr\u00e9 vztahy i s farm\u00e1\u0159i. Kdy\u017e jsme za\u010d\u00ednali, tak jsme je nav\u0161t\u00edvili a uk\u00e1zali jim, kter\u00e9 svaly z hov\u011bz\u00ed k\u00fdty p\u0159esn\u011b pot\u0159ebujeme a jak je maj\u00ed p\u0159ipravit.<\/p>\n<p><span style=\"text-decoration: underline;\">A ODKUD JSOU OSTATN\u00cd INGREDIENCE?<\/span><\/p>\n<p>V\u017edycky se sna\u017e\u00edme, aby maximum na\u0161ich ingredienc\u00ed poch\u00e1zelo z \u010cesk\u00e9 republiky. Sna\u017e\u00edme se nach\u00e1zet takov\u00e9 chu\u0165ov\u00e9 kombinace, kter\u00e9 uspokoj\u00ed zap\u00e1len\u00e9 fanou\u0161ky chilli, ale tak\u00e9 v\u0161echny ostatn\u00ed.
