N\u00e1sledovala smr\u0161\u0165 \u010derp\u00e1n\u00ed informac\u00ed od \u010desk\u00fdch foodbloger\u016f, p\u0159edev\u0161\u00edm pana Cuketky a Julky Fischerov\u00e9 alias Ma\u0161krtnice. Dal\u0161\u00edm zdrojem byla FB skupina Pe\u010demPecen. N\u00e1sledovaly zahrani\u010dn\u00ed weby o pe\u010den\u00ed, dorazily n\u00e1m ze zahrani\u010d\u00ed prvn\u00ed knihy. V\u0161e doprov\u00e1zely hodiny a hodiny str\u00e1ven\u00e9 hn\u011bten\u00edm a pe\u010den\u00edm. V\u011bt\u0161inu \u010dasu jsme v\u011bnovali lad\u011bn\u00ed recept\u016f a ochutn\u00e1v\u00e1n\u00ed. V\u0161e do sebe za\u010dalo zapadat.<\/p>\n<p><strong>Absolvovali jste n\u011bjak\u00e9 klasick\u00e9 peka\u0159sk\u00e9 vzd\u011bl\u00e1n\u00ed?<\/strong><\/p>\n<p>Ne a je to z\u0159ejm\u011b lep\u0161\u00ed \u263a.\u00a0 Kr\u00e1\u010d\u00edme svoj\u00ed cestou, ke v\u0161emu si p\u0159ich\u00e1z\u00edme vlastn\u00ed zku\u0161enost\u00ed a prax\u00ed a radami kamar\u00e1d\u016f, zn\u00e1m\u00fdch \u2013 peka\u0159\u016f, kte\u0159\u00ed n\u00e1s oslovuj\u00ed sv\u00fdm umem a \u0159emeslem. Nicm\u00e9n\u011b bychom r\u00e1di absolvovali n\u011bjak\u00fd workshop \u0159emesln\u00e9ho pe\u010den\u00ed v zahrani\u010d\u00ed.<\/p>\n<p><strong>Co v\u0161echno ve va\u0161\u00ed pek\u00e1rn\u011b pe\u010dete?<\/strong><\/p>\n<p>Moment\u00e1ln\u011b pe\u010deme pravideln\u011b \u0161est druh\u016f chleb\u016f ze \u017eiv\u00e9ho \u017eitn\u00e9ho kvasu a bagety z p\u0161eni\u010dn\u00e9ho kvasu a d\u00e1le pak i speciality na zak\u00e1zku. Sna\u017e\u00edme se st\u00e1le vym\u00fd\u0161let n\u011bco nov\u00e9ho, \u010d\u00edm bychom p\u0159ekvapili z\u00e1kazn\u00edky, ale i sebe.<\/p>\n<p><strong>Co je pro v\u00e1s p\u0159i pe\u010den\u00ed nejd\u016fle\u017eit\u011bj\u0161\u00ed?<\/strong><\/p>\n<p>Velmi d\u016fle\u017eit\u00e1 je pro n\u00e1s kvalita, co\u017e je pot\u0159eba ch\u00e1pat jako komplexn\u00ed proces. Pot\u0159ebujete kvalitn\u00ed suroviny. Z mizern\u00e9 mouky dobr\u00fd chl\u00e9b neupe\u010dete. Pro mouku si jezd\u00edme p\u0159\u00edmo do ml\u00fdna, ostatn\u00ed ingredience si vyb\u00edr\u00e1me sami a nejl\u00e9pe z lok\u00e1ln\u00edch zdroj\u016f. Jeliko\u017e klademe d\u016fraz na co nejvy\u0161\u0161\u00ed pod\u00edl ru\u010dn\u00ed pr\u00e1ce, nejv\u00edce pr\u00e1ce u n\u00e1s odvedou ruce peka\u0159e, kter\u00fd rozum\u00ed chlebu a jednotliv\u00fdm proces\u016fm na \u0159emesln\u00e9 \u00farovni. Nesm\u00ed chyb\u011bt nad\u0161en\u00ed a radost z pe\u010den\u00ed, cht\u00edt se st\u00e1le u\u010dit n\u011bco nov\u00e9ho. A v neposledn\u00ed \u0159ad\u011b jsme r\u00e1di za z\u00e1kazn\u00edky, kte\u0159\u00ed dok\u00e1\u017e\u00ed ocenit kvalitu a kupuj\u00ed si na\u0161e chleby a bagety.<\/p>\n<p><strong>M\u011bn\u00ed se podle v\u00e1s vztah \u010cech\u016f k pe\u010divu? A pokud ano, jak?<\/strong><\/p>\n<p>Ur\u010dit\u011b se m\u011bn\u00ed, je tu jednozna\u010dn\u00fd p\u0159\u00edklon ke kvalitn\u00edmu chlebu a pe\u010divu. Rostouc\u00ed po\u010det z\u00e1kazn\u00edk\u016f v obchodech, do kter\u00fdch dov\u00e1\u017e\u00edme, a pravideln\u011b vyprodan\u00fd st\u00e1nek na jarmarc\u00edch a trz\u00edch n\u00e1s o tom p\u0159esv\u011bd\u010duje. Vznikaj\u00ed r\u016fzn\u00e1 sdru\u017een\u00ed, hodn\u011b lid\u00ed si pe\u010de chl\u00e9b doma, chod\u00ed k n\u00e1m pro rady.<br \/>\nNa\u0161e chleby dod\u00e1v\u00e1me i do \u0161kol a \u0161kolek, tak\u017ee se za\u010d\u00edn\u00e1 kone\u010dn\u011b p\u0159em\u00fd\u0161let i zde. Ve \u0161kolce, kterou nav\u0161t\u011bvuje n\u00e1\u0161 nejmlad\u0161\u00ed synek, pe\u010dou d\u011bti pravideln\u011b v p\u00e1tek ka\u017ed\u00fd sv\u016fj chl\u00e9b, kter\u00fd si slavnostn\u011b odn\u00e1\u0161ej\u00ed v pl\u00e1t\u011bn\u00e9m s\u00e1\u010dku dom\u016f.
