O Kimchi byl docela z\u00e1jem a j\u00e1 jsem ho nejprve v\u016fbec neznala.<br \/>\n<span style=\"color: #d11600\">Libor<\/span>: Poprv\u00e9 jsem ochutnal kimchi v roce 2012, kdy\u017e ho Dana donesla dom\u016f.<br \/>\nO co se asi jedn\u00e1 jsem sly\u0161el v seri\u00e1lu M.A.S.H.<\/p>\n<p><strong>Vzpomenete si na sv\u016fj \u00fapln\u011b prvn\u00ed dojem z prvn\u00edho sousta? Byla to l\u00e1ska na prvn\u00ed ochutn\u00e1n\u00ed, nebo jste mu museli nejd\u0159\u00edve p\u0159ij\u00edt na chu\u0165, jako je tomu t\u0159eba u k\u00e1vy nebo oliv?<\/strong><br \/>\n<span style=\"color: #d11600\">Dana<\/span>: K tomu, abych kimchi poprv\u00e9 ochutnala, jsem se musela rozhodnout, \u017ee chci zjistit, co kimchi je. Nejprve jsem o n\u011bm jen mluvila se z\u00e1kazn\u00edky, kte\u0159\u00ed ho znali. Po zji\u0161t\u011bn\u00fdch informac\u00edch od nich i z webu jsem postupn\u011b ztr\u00e1cela odstup, kter\u00fd jsem od kimchi m\u011bla. Byl zp\u016fsoben\u00fd hlavn\u011b kv\u016fli v\u00fdrazn\u00e9mu aroma. M\u016fj dojem z prvn\u00edho sousta byl, jako bych ochutnala n\u011bco, co v\u016fbec nezn\u00e1m, nev\u00edm co s t\u00edm, nev\u00edm, jestli mi to chutn\u00e1 nebo ne. Postupn\u011b jsem se do n\u011bj zamilov\u00e1vala, jak do chuti a v\u016fn\u011b, tak do jeho \u017eivosti a pikantnosti. Musela jsem se do n\u011bj vj\u00edst, vc\u00edtit, &#8222;osahat&#8220; si ho.<br \/>\n<span style=\"color: #d11600\">Libor<\/span>: Kdy\u017e kimchi donesla Dana z obchod\u016f dom\u016f a dala mi jej ochutnat, nijak m\u011b to nezaujalo (specifick\u00e9 aroma a ostr\u00e1 chu\u0165). Jen d\u00edky tomu, \u017ee jsem o kimchi sly\u0161el a byl jsem zv\u011bdav\u00fd, ochutnal jsem. Kimchi mi za\u010dalo chutnat a\u017e postupn\u011b.<\/p>\n<p><strong>Dok\u00e1\u017eete (jako v\u00fdrobci) popsat chu\u0165 kimchi jednou v\u011btou? Zkuste to, pros\u00edm. \ud83d\ude42<\/strong><br \/>\n\u017div\u00e1, sv\u011b\u017e\u00ed, pestr\u00e1 a barevn\u00e1, harmonick\u00e1 a nad\u010dasov\u00e1.<\/p>\n<p><strong>Od v\u00e1\u0161n\u011b k byznysu vede n\u011bkdy dlouh\u00e1 cesta, jindy je to jasn\u00e1 volba. Jak dlouh\u00e1 byla ta cesta ve va\u0161em p\u0159\u00edpad\u011b?<\/strong><br \/>\nOd roku 2012 bylo zkoum\u00e1n\u00ed a v\u00fdroba kon\u00ed\u010dkem, pak jsme postupn\u011b vyr\u00e1b\u011bli i pro zn\u00e1m\u00e9. A \u010dasem i pro zn\u00e1m\u00e9 zn\u00e1m\u00fdch. Od konce roku 2014 (kolaudace v\u00fdrobny a nahl\u00e1\u0161en\u00ed se k \u010cSZI) vyr\u00e1b\u00edme a nab\u00edz\u00edme i do obchodn\u00ed s\u00edt\u011b. Tak\u017ee celkem to trvalo asi dva roky.<\/p>\n<p><strong>Jak dlouho trv\u00e1 v\u00fdroba jedn\u00e9 d\u00e1vky kimchi? Tedy konkr\u00e9tn\u011bji jak dlouho sm\u011bs zeleniny fermentuje?<\/strong><br \/>\nV\u00fdroba trv\u00e1 p\u0159ibli\u017en\u011b 20 dn\u00ed p\u0159i n\u00edzk\u00e9 teplot\u011b, ale \u2013 jak jsme zjistili \u2013 doba se li\u0161\u00ed podle ro\u010dn\u00edho obdob\u00ed, po\u010das\u00ed, zeleniny a dal\u0161\u00edch vliv\u016f.<\/p>\n<p><strong>\u0158\u00edk\u00e1 se, \u017ee kimchi je jednou z p\u011bti zdrav\u00ed nejprosp\u011b\u0161n\u011bj\u0161\u00edch potravin. V \u010dem je tak jedine\u010dn\u00e9?<\/strong><br \/>\nSkladba zeleniny pat\u0159\u00ed k velmi t\u011blu prosp\u011b\u0161n\u00fdm i za syrova. Jej\u00ed fermentac\u00ed se \u00fa\u010dinky n\u00e1sob\u00ed. Pro\u010d je kimchi cen\u011bn\u00e9: Vl\u00e1knina, probiotika, enzymy, vitam\u00edny (A, B, C), v\u00e1pn\u00edk, \u017eelezo, selen, aminokyseliny, flavonoidy, kapsaicin a dal\u0161\u00ed.<\/p>\n<p><span style=\"color: #000000\"><strong>Co v\u0161echno je mo\u017en\u00e9 s kimchi d\u011blat?<\/strong><\/span><br \/>\nKimchi se konzumuje studen\u00e9 jako p\u0159\u00edloha k j\u00eddlu (d\u00edky obsahu probiotik nejzdrav\u011bj\u0161\u00ed varianta).
