O to hor\u0161\u00ed, jeliko\u017e dcera m\u011bla ji\u017e bezml\u00e9\u010dnou a bezlakt\u00f3zovou dietu. V\u0161ichni s\u00a0dietn\u00edmi omezen\u00edmi v\u00ed, \u017ee nen\u00ed snadn\u00e9 se n\u011bkde \u201ebezpe\u010dn\u011b\u201c naj\u00edst, a v\u00a0t\u00e9to (a spoust\u011b jin\u00fdch) kombinac\u00ed je to skoro nemo\u017en\u00e9. Nab\u00eddka bezlepkov\u00e9ho pe\u010diva a z\u00e1kusk\u016f na na\u0161em trhu se mi v\u00a0porovn\u00e1n\u00ed se zahrani\u010d\u00edm zd\u00e1la nedosta\u010duj\u00edc\u00ed, a\u0165 jde o slo\u017een\u00ed nebo chu\u0165. Rozhodli jsme se tedy, \u017ee se do toho pust\u00edme po hlav\u011b a\u00a0nab\u00eddneme z\u00e1kazn\u00edk\u016fm s\u00a0dietn\u00edmi omezen\u00edmi v\u00fdrobky, kter\u00e9 jsou jin\u00e9 a na kter\u00fdch si pochutnaj\u00ed.<\/p>\n<p>&nbsp;<\/p>\n<p><strong>M\u016f\u017eete n\u00e1<\/strong><strong>m p\u0159edstavit va\u0161i pek\u00e1rnu? Co vyr\u00e1b\u00edte a jak\u00fdmi z\u00e1sadami se p\u0159i v\u00fdrob\u011b \u0159\u00edd\u00ed<\/strong><strong>te?<\/strong><br \/>\nJe to jednoduch\u00e9 \u2013 vyr\u00e1b\u00edme bezlepkov\u00e9 pe\u010divo. V\u0161echno na\u0161e pe\u010divo je bez deproteinovan\u00e9ho p\u0161eni\u010dn\u00e9ho \u0161krobu, ml\u00e9\u010dn\u00e9 b\u00edlkoviny, lakt\u00f3zy, s\u00f3ji, vajec i lupiny. Dal\u0161\u00ed \u010d\u00e1st na\u0161\u00ed v\u00fdroby jde sm\u011brem sladk\u00e9ho pe\u010den\u00ed \u2013 i zde m\u00e1me pom\u011brn\u011b \u0161irok\u00fd sortiment v\u00fdrobk\u016f pro z\u00e1kazn\u00edky se zk\u0159\u00ed\u017een\u00fdmi alergiemi.<br \/>\nNa\u0161\u00ed hlavn\u00ed z\u00e1sadou je \u010derstvost surovin, kter\u00e9 pe\u010dliv\u011b vyb\u00edr\u00e1me, a dodr\u017eov\u00e1n\u00ed hygienick\u00fdch norem. A co k\u00a0bezlepkov\u00e9mu pe\u010den\u00ed neodmysliteln\u011b pat\u0159\u00ed, je samoz\u0159ejm\u011b samostatn\u00e1 v\u00fdroba.<\/p>\n<p>&nbsp;<\/p>\n<p><strong>Jak\u00e1 je va\u0161e filozofie?<\/strong><br \/>\nNa\u0161\u00ed filozofi\u00ed je nab\u00eddnout z\u00e1kazn\u00edk\u016fm kone\u010dn\u011b chutn\u00e9 pe\u010divo s\u00a0minim\u00e1ln\u00edm obsahem \u0161krob\u016f, bez p\u0161eni\u010dn\u00e9ho deproteinovan\u00e9ho \u0161krobu a s\u00a0co nejmen\u0161\u00edm obsahovan\u00fdm mno\u017estv\u00edm alergen\u016f. Chceme, aby si z\u00e1kazn\u00edk na\u0161e pe\u010divo vychutnal a v\u00a0reg\u00e1le po n\u011bm op\u011bt s\u00e1hl. D\u011bl\u00e1me svou pr\u00e1ci jinak ne\u017e na\u0161e konkurence (i to je jedna z\u00a0d\u016fle\u017eit\u00fdch \u010d\u00e1st\u00ed na\u0161\u00ed firemn\u00ed filozofie). Chceme se odli\u0161it a nab\u00eddnout v\u011bt\u0161\u00ed pestrost sortimentu.<\/p>\n<p>&nbsp;<\/p>\n<p><strong>Jak velk\u00fd je rozd\u00edl ve v\u00fdrob\u011b klasick<\/strong><strong>\u00e9ho a bezlepkov<\/strong><strong>\u00e9ho pe\u010diva? Jak\u00e1 jsou specifika pe\u010den\u00ed bez lepku?<\/strong><br \/>\nNejv\u011bt\u0161\u00edm rozd\u00edlem je samoz\u0159ejm\u011b absence lepku v\u00a0bezlepkov\u00fdch mouk\u00e1ch. Na\u0161\u00edm c\u00edlem bylo dos\u00e1hnout t\u00e9m\u011b\u0159 nerozeznateln\u00e9, ba dokonce i lep\u0161\u00ed chuti, ne\u017e je chu\u0165 klasick\u00e9ho pe\u010diva. Jsem r\u00e1da, \u017ee se n\u00e1m to da\u0159\u00ed.<\/p>\n<p>&nbsp;<\/p>\n<p><strong>Pro\u010d by bezlepkov<\/strong><strong>\u00e9 pe\u010d<\/strong><strong>ivo m\u011bl j\u00edst zdrav\u00fd \u010dlov\u011bk bez celiakie nebo glutenov<\/strong><strong>\u00e9 alergie?<\/strong><\/p>\n<p>Dne\u0161n\u00ed p\u0161enice se velmi li\u0161\u00ed od p\u0161enice z\u00a0dob na\u0161ich prarodi\u010d\u016f. Proto se do klasick\u00e9ho pe\u010diva za\u010dala p\u0159id\u00e1vat krom\u011b dodate\u010dn\u00e9ho mno\u017estv\u00ed lepku i dal\u0161\u00ed aditiva a konzervanty, co\u017e m\u016f\u017ee zp\u016fsobovat n\u011bkter\u00fdm lidem zdravotn\u00ed nebo za\u017e\u00edvac\u00ed pot\u00ed\u017ee, by\u0165 nemaj\u00ed potravinovou alergii nebo intoleranci. Jedn\u00e1 se nap\u0159\u00edklad o p\u00e1len\u00ed \u017e\u00e1hy, nad\u00fdm\u00e1n\u00ed, ekz\u00e9my, akn\u00e9 apod. Konzumace bezlepkov\u00e9ho pe\u010diva (potravin) m\u016f\u017ee \u010dasto od zm\u00edn\u011bn\u00fdch probl\u00e9m\u016f pomoci nebo je alespo\u0148 zm\u00edrnit.
