Postupn\u011b p\u0159ibyla dal\u0161\u00ed zv\u00ed\u0159ata. O osm let pozd\u011bji jste pak z\u00edskali certifik\u00e1t ekologick\u00e9ho zem\u011bd\u011blstv\u00ed. Co v\u00e1s k\u00a0roz\u0161\u00ed\u0159en\u00ed vedlo?<\/strong><\/p>\n<p>Na za\u010d\u00e1tku 90. let jsme jako jedni z\u00a0prvn\u00edch vyhnali zv\u00ed\u0159ata na pastviny. Kdy\u017e jsem vid\u011bl, jak jsou spokojen\u00e1, uv\u011bdomil jsem si, \u017ee u\u017e je nechci chovat jinak. To byl asi z\u00e1sadn\u00ed impuls v\u00a0p\u0159em\u011bn\u011b Josefa Sklen\u00e1\u0159e na nad\u0161en\u00e9ho bio zem\u011bd\u011blce a jeho farmy na Biofarmu Sasov. Chovatel, kter\u00fd jednou vypust\u00ed zv\u00ed\u0159ata do v\u00fdb\u011bh\u016f a na pastviny, je u\u017e nikdy nechce trvale zav\u0159\u00edt do st\u00e1j\u00ed. Na rozd\u00edl od t\u011bch konven\u010dn\u00edch, zav\u0159en\u00fdch cel\u00fd \u017eivot bez slunce, jsou na\u0161e zv\u00ed\u0159ata p\u0159irozen\u011b otu\u017eil\u00e1 a dokonce i v\u00fdrazn\u011b stresu odoln\u011bj\u0161\u00ed.\u00a0 Zv\u00ed\u0159ata ze st\u00e1j\u00ed jen t\u011b\u017eko vy\u017eenete z\u00a0kotc\u016f, neznaj\u00ed nic jin\u00e9ho ne\u017e \u010dty\u0159i st\u011bny.\u00a0 U zv\u00ed\u0159at z pastvin m\u00e1te sp\u00ed\u0161e probl\u00e9m, b\u00fdt alespo\u0148 stejn\u011b rychl\u00fd jako ona (sm\u00edch). Co se t\u00fd\u010de certifik\u00e1tu ekologick\u00e9ho zem\u011bd\u011blstv\u00ed \u2013 \u010dlov\u011bk mus\u00ed splnit celou \u0159adu z\u00e1konem stanoven\u00fdch po\u017eadavk\u016f, ale my je pln\u00edme r\u00e1di. Jednak jsou prosp\u011b\u0161n\u00e1 pro zv\u00ed\u0159ata samotn\u00e1 a tak\u00e9 maj\u00ed z\u00e1sadn\u00ed vliv na kvalitu produkt\u016f.<\/p>\n<p><strong>Jak se prost\u0159ed\u00ed, ve kter\u00e9m zv\u00ed\u0159ata \u017eij\u00ed, podep\u00ed\u0161e na kvalit\u011b masa?<\/strong><\/p>\n<p>Je to \u00fapln\u011b stejn\u00e9 jako s\u00a0na\u0161\u00edm zdrav\u00edm. Kdy\u017e n\u011bkdo \u017eije v\u00a0zat\u00ed\u017een\u00fdch oblastech, je daleko v\u00edc nemocn\u00fd, ne\u017e lid\u00e9 ze zdrav\u011bj\u0161\u00edch region\u016f. Z\u00a0tohoto pohledu je prost\u0159ed\u00ed Vyso\u010diny ide\u00e1ln\u00ed. Velk\u00fd vliv m\u00e1 ale i krmen\u00ed zv\u00ed\u0159at. Oproti konven\u010dn\u00edm st\u00e1j\u00edm, kde se zv\u00ed\u0159ata krm\u00ed pr\u016fmyslovou krmnou sm\u011bs\u00ed, je pastevn\u00ed v\u00fdkrm daleko zdrav\u011bj\u0161\u00ed a p\u0159irozen\u011bj\u0161\u00ed. Na Biofarm\u011b Sasov m\u00e1te i vlastn\u00ed bio jatka<\/strong>\u2026<\/p>\n<p>Kdy\u017e je zv\u00ed\u0159e vystresovan\u00e9, doch\u00e1z\u00ed k\u00a0metabolick\u00e9mu &#8222;sp\u00e1len\u00ed&#8220; vnitrosvalov\u00e9ho cukru, co\u017e m\u00e1 za n\u00e1sledek nedokonal\u00e9 zr\u00e1n\u00ed na b\u00e1zi ml\u00e9\u010dn\u00e9ho kva\u0161en\u00ed. Proto jsme vybudovali faremn\u00ed jatka, kter\u00e1 mus\u00ed splnit p\u0159\u00edsn\u00e9 antistresov\u00e9 standardy, nutn\u00e9 pro certifikaci bio por\u00e1\u017eky.<\/p>\n<p><strong>Jak por\u00e1\u017eka na bio jatk\u00e1ch prob\u00edh\u00e1? <\/strong><\/p>\n<p>Zaprv\u00e9, jatka jsou p\u0159\u00edmo v\u00a0are\u00e1lu farmy, abychom maxim\u00e1ln\u011b vylou\u010dili stres z\u00a0dopravy. B\u011b\u017en\u00e1 praxe je toti\u017e takov\u00e1, \u017ee vystresovan\u00e1 zv\u00ed\u0159ata jsou p\u0159epravovan\u00e1 des\u00edtky a\u017e stovky kilometr\u016f. P\u0159ed por\u00e1\u017ekou pak se zv\u00ed\u0159aty manipuluj\u00ed ti sam\u00ed lid\u00e9, kte\u0159\u00ed je piplali a odchovali od narozen\u00ed. Na rozd\u00edl od ostatn\u00edch jatek nesm\u00edme pou\u017e\u00edvat bolestiv\u00e9 elektrick\u00e9 pohan\u011b\u010de, ostatn\u011b ned\u011blali bychom to, ani kdyby to nebylo napsan\u00e9 v\u00a0z\u00e1kon\u011b. Stejn\u011b tak, \u017ee zv\u00ed\u0159ata nesm\u00ed vid\u011bt por\u00e1\u017een\u00fd kus ani jeho krev. Je to pro n\u00e1s zkr\u00e1tka nep\u0159ijateln\u00e9.<\/p>\n<p><strong>Zam\u011b\u0159me se konkr\u00e9tn\u011b na hov\u011bz\u00ed maso &#8211; jak\u00fd je rozd\u00edl mezi masem, kter\u00e9 poch\u00e1z\u00ed z\u00a0va\u0161\u00ed farmy a hov\u011bz\u00edm, kter\u00e9 je k\u00a0dost\u00e1n\u00ed v\u00a0supermarketu?<\/strong><\/p>\n<p>Na\u0161e maso je vyzr\u00e1l\u00e9, tud\u00ed\u017e k\u0159eh\u010d\u00ed a pln\u011bj\u0161\u00ed chuti. N\u011bkolik t\u00fddn\u016f je toti\u017e odv\u011b\u0161eno nebo tak\u00e9 &#8222;sta\u0159eno&#8220;. \u0158\u00edk\u00e1 se, \u017ee \u010d\u00edm v\u011bt\u0161\u00ed je zv\u00ed\u0159e, t\u00edm d\u00e9le by m\u011blo zr\u00e1t. Tak\u017ee zat\u00edmco dr\u016fbe\u017e je mo\u017en\u00e9 konzumovat dva dny po por\u00e1\u017ece, vep\u0159ov\u00e9 by se nem\u011blo konzumovat d\u0159\u00edve ne\u017e po t\u00fddnu a hov\u011bz\u00ed po 4 a\u017e 6 t\u00fddnech. Mamut by samoz\u0159ejm\u011b pot\u0159eboval daleko v\u00edc \u010dasu (sm\u00edch). Nen\u00ed mo\u017en\u00e9 nechat ho dozr\u00e1t doma?<\/strong><\/p>\n<p>Pro zr\u00e1n\u00ed doma nem\u00e1 nikdo pravd\u011bpodobn\u011b ide\u00e1ln\u00ed podm\u00ednky. Cel\u00fd proces zr\u00e1n\u00ed je pom\u011brn\u011b slo\u017eit\u00fd. Za\u010d\u00edn\u00e1 u\u017e ve st\u00e1j\u00edch nebo nejl\u00e9pe je\u0161t\u011b na pastvin\u00e1ch \u2013 ide\u00e1ln\u00ed je, kdy\u017e je zv\u00ed\u0159e chovan\u00e9 na tr\u00e1v\u011b, venku pod \u0161ir\u00fdm nebem. Velk\u00fd vliv m\u00e1 tak\u00e9 samotn\u00e1 por\u00e1\u017eka. Nav\u00edc, aby maso dob\u0159e zr\u00e1lo, je pot\u0159eba nechat ho viset v\u00a0cel\u00fdch \u010dtvrt\u00edch nebo p\u016flk\u00e1ch v\u00a0zrac\u00edch chlad\u00edrensk\u00fdch boxech, kde je teplota kolem nuly a reguluje se vlhkost. Teprve potom se maso bour\u00e1 a vakuov\u011b bal\u00ed, kde je\u0161t\u011b podle parti\u00ed m\u016f\u017ee p\u0159\u00edpadn\u011b d\u00e1le dozr\u00e1vat. Zp\u016fsob\u016f, jak nechat maso vyzr\u00e1t je n\u011bkolik. My jsme si vybrali nejt\u011b\u017e\u0161\u00ed \u2013 such\u00e9 zr\u00e1n\u00ed v\u00a0cel\u00fdch \u010dtvrt\u00edch. Z\u00a0masa tak odch\u00e1z\u00ed voda a v\u00fdrazn\u011b se sni\u017euje hmotnost masa. Jen\u017ee masu pak z\u016fstane v\u00fdrazn\u011bj\u0161\u00ed chu\u0165 a v\u016fn\u011b. Dal\u0161\u00ed mo\u017enost je mokr\u00e9 zr\u00e1n\u00ed \u2013 maso se druh\u00fd den po por\u00e1\u017ece zabal\u00ed do vakuov\u00fdch s\u00e1\u010dk\u016f a zraje v\u00a0nich. Voda se tak neodpa\u0159uje, hromad\u00ed se v s\u00e1\u010dku a n\u00e1sledn\u011b je p\u0159ed pou\u017eit\u00edm masa vyl\u00e9v\u00e1na do odpadu.<\/p>\n<p><strong>M\u016f\u017ee laik poznat u\u017e b\u011bhem n\u00e1kupu vyzr\u00e1l\u00e9 maso. Li\u0161\u00ed se t\u0159eba barvou?<\/strong><\/p>\n<p>Na prvn\u00ed pohled nemus\u00ed b\u00fdt rozd\u00edl z\u0159ejm\u00fd ani pro odborn\u00edky. Obecn\u011b se ale d\u00e1 \u0159\u00edci, \u017ee vyzr\u00e1l\u00e9 maso je tmav\u0161\u00ed, i kdy\u017e i na barvu m\u00e1 vliv zp\u016fsob opracov\u00e1n\u00ed parti\u00ed p\u0159i bour\u00e1n\u00ed. Hodn\u011b napov\u00ed tak\u00e9 v\u016fn\u011b. Pro vakuovan\u00e9 maso je typick\u00e1 v\u00fdrazn\u011bj\u0161\u00ed v\u016fn\u011b kyseliny ml\u00e9\u010dn\u00e9, kter\u00e1 p\u0159i zr\u00e1n\u00ed v s\u00e1\u010dku p\u0159irozen\u011b vznik\u00e1. Nejv\u011bt\u0161\u00ed rozd\u00edl ale samoz\u0159ejm\u011b pozn\u00e1 spot\u0159ebitel na tal\u00ed\u0159i \u2013 vyzr\u00e1l\u00e9 maso je mnohem m\u011bk\u010d\u00ed, chutn\u011bj\u0161\u00ed a vo\u0148av\u011bj\u0161\u00ed.<\/p>\n<p><strong>Je vyzr\u00e1l\u00e9 hov\u011bz\u00ed vhodn\u00e9 na jakoukoliv \u00fapravu? Hod\u00ed se na steak i do gul\u00e1\u0161e?<\/strong><\/p>\n<p>U steak\u016f je zr\u00e1n\u00ed masa nutnost. M\u011bkkost masa ale jist\u011b ocen\u00edte i p\u0159i pe\u010den\u00ed a koneckonc\u016f i u gul\u00e1\u0161e. Vyzr\u00e1l\u00e9mu masu \u010dasto sta\u010d\u00ed mnohem krat\u0161\u00ed \u010das kuchy\u0148sk\u00e9 \u00fapravy. Na na\u0161\u00ed farm\u011b m\u00e1me i vlastn\u00ed malou masnou v\u00fdrobnu, kde pou\u017e\u00edv\u00e1me pouze vyzr\u00e1l\u00e9 maso z\u00a0vlastn\u00edch zv\u00ed\u0159at.<\/p>\n<p><em>A jak se \u0159\u00edk\u00e1 &#8211; lep\u0161\u00ed jednou vid\u011bt (nebo ochutnat), ne\u017e stokr\u00e1t sly\u0161et.
