Venkovn\u00ed va\u0159en\u00ed, ohe\u0148, kou\u0159 \u2013\u00a0to m\u00e1 prost\u011b svoje kouzlo. Z\u00e1\u017eitek z j\u00eddla umoc\u0148uj\u00ed n\u00e1padit\u00e9 kombinace chut\u00ed. A my pro v\u00e1s m\u00e1me inspiraci na postup do dal\u0161\u00edho levelu gastronomick\u00e9 kombinatoriky.<\/p>\n\n\n\n<p>Z\u00e1kladn\u00ed menu grilova\u010dky sest\u00e1v\u00e1 z n\u011bkolika m\u00e1lo polo\u017eek \u2013 maso (p\u0159\u00edpadn\u011b grilovan\u00e1 zelenina, grilovac\u00ed s\u00fdry nebo t\u0159eba houby), dressingy, om\u00e1\u010dky a p\u0159\u00edlohy. Pr\u00e1v\u011b proto, \u017ee nab\u00eddka nen\u00ed bezb\u0159eh\u00e1 (koneckonc\u016f z\u00e1le\u017e\u00ed n\u00e1m i na rychlosti a jednoduchosti p\u0159\u00edpravy), je d\u016fle\u017eit\u00e9 m\u00edt v\u0161echno slad\u011bn\u00e9. A my se dnes zam\u011b\u0159\u00edme na kombinace masa a\u2026 pe\u010diva.<\/p>\n\n\n\n<h3 class=\"has-vivid-red-color has-text-color\"><strong>Maso a pe\u010divo???<\/strong><\/h3>\n\n\n\n<p>No ano, co se div\u00edte? Dobr\u00fd chl\u00e9b u\u017e d\u00e1vno nen\u00ed jen v\u00edce \u010di m\u00e9n\u011b p\u00f3rovit\u00e1 hmota bez chuti a z\u00e1pachu. Dobr\u00fd kraj\u00edc z \u0159emesln\u011b upe\u010den\u00e9ho bochn\u00edku se d\u00e1 s chut\u00ed sn\u00edst i such\u00fd. A pr\u00e1v\u011b takov\u00e9 m\u00e1me v na\u0161ich prodejn\u00e1ch. Dnes se budeme bavit speci\u00e1ln\u011b o \u017eitn\u00fdch chlebech z Kol\u00e1\u010dkovy pek\u00e1rny a \u0159ekneme v\u00e1m, kter\u00e1 ze sedmi p\u0159\u00edchut\u00ed, kter\u00e9 aktu\u00e1ln\u011b v prodejn\u00e1ch m\u00e1me, n\u00e1m nejv\u00edc chutnala s jak\u00fdm grilovan\u00fdm pokrmem. P\u0159ipraveni? OK, jdeme do toho \u0159\u00edznout!<\/p>\n\n\n\n<h3 class=\"has-vivid-red-color has-text-color\"><strong>Rodinn\u00e1 pek\u00e1rna<\/strong><\/h3>\n\n\n\n<p>Na \u00favod je\u0161t\u011b n\u011bco ke Kol\u00e1\u010dkov\u011b pek\u00e1rn\u011b. Vznikla v roce 2015, kdy ji zalo\u017eil Ji\u0159\u00ed Kol\u00e1\u010dek spole\u010dn\u011b se svou dcerou Michaelou. Pek\u00e1rna se specializuje na v\u00fdrobu 100% \u017eitn\u00e9ho chleba z&nbsp;\u017eitn\u00e9ho kvasu, kter\u00fd si p\u0159ipravuj\u00ed ka\u017ed\u00fd den metodou t\u0159\u00edstup\u0148ov\u00e9ho veden\u00ed. Do chleba p\u0159id\u00e1vaj\u00ed 7\u201310 % sem\u00ednek slune\u010dnice, lnu a d\u00fdn\u011b.&nbsp;\u201eD\u00edky pou\u017eit\u00ed v\u00fdhradn\u011b \u017eitn\u00e9ho kvasu a&nbsp;tradi\u010dn\u00ed pek\u00e1rensk\u00e9 technologie se jedn\u00e1 o&nbsp;pe\u010divo s&nbsp;<strong>vynikaj\u00edc\u00edmi parametry stravitelnosti.<\/strong>&nbsp;Pou\u017eit\u00ed prav\u00e9ho kvasu a&nbsp;dlouh\u00e9 doby kynut\u00ed&nbsp;<strong>sni\u017euje obsah antinutri\u010dn\u00edch l\u00e1tek<\/strong>, kter\u00e9 jsou jinak pro \u017eitnou mouku charakteristick\u00e9. Kvas p\u0159\u00edzniv\u011b ovliv\u0148uje organoleptick\u00e9 vlastnosti chleba, takzvan\u011b jej \u201anatr\u00e1v\u00ed\u2018 dop\u0159edu a&nbsp;chleby jsou pak l\u00e9pe straviteln\u00e9,\u201c p\u00ed\u0161ou Kol\u00e1\u010dkovi na sv\u00e9m webu.<\/p>\n\n\n\n<p>Slo\u017een\u00ed \u017eitn\u00e9ho chleba z rodinn\u00e9 pek\u00e1rny v Janov\u011b nad Nisou je kr\u00e1sn\u00e9 ve sv\u00e9 jednoduchosti: chlebov\u00e1 \u017eitn\u00e1 mouka, kvas z \u017eitn\u00e9 mouky, voda, sem\u00ednka (d\u00fd\u0148ov\u00e1, slune\u010dnicov\u00e1 a ln\u011bn\u00e1 v r\u016fzn\u00e9m pom\u011bru) cca 7 %, s\u016fl, ko\u0159en\u00ed + ingredience podle druhu 4 %.<\/p>\n\n\n\n<p>Tak jsme v\u00e1s sezn\u00e1mili a te\u010f jdeme na ty kombinace.<\/p>\n\n\n\n<h3 class=\"has-vivid-red-color has-text-color\"><strong>Ke steaku oliv\u00e1\u010d<\/strong><\/h3>\n\n\n\n<p>Za\u010dn\u011bme klasikou \u2013&nbsp;\u0161\u0165avnat\u00fdm hov\u011bz\u00edm steakem. K tomu n\u00e1m nejv\u00edc chutnal <a href=\"https:\/\/eshop.sklizeno.cz\/chleb-olivovy-550-g-p210464\">Olivov\u00fd chl\u00e9b<\/a>, ale spokojen\u00ed jsme byli i s <a href=\"https:\/\/eshop.sklizeno.cz\/bio-chleb-orechovy-700-g-pN0500170\">chlebem o\u0159echov\u00fdm<\/a>.<\/p>\n\n\n\n<h3 class=\"has-vivid-red-color has-text-color\"><strong>Grilovan\u00e9 ku\u0159\u00e1tko s mrkvi\u010dkou<\/strong><\/h3>\n\n\n\n<p>Ke ku\u0159eti grilovan\u00e9mu dozlatova s k\u0159upavou k\u016f\u017ei\u010dkou (grilovali jsme ku\u0159ec\u00ed \u010dtvrtky, abychom nevysu\u0161ili prs\u00ed\u010dka) se podle n\u00e1s nejl\u00e9pe hod\u00ed <a href=\"https:\/\/eshop.sklizeno.cz\/bio-chleb-mrkvovy-550-g-pN0500233\">Mrkvov\u00fd chl\u00e9b<\/a>. Nasl\u00e1dl\u00e1 chu\u0165 maso kr\u00e1sn\u011b dopl\u0148uje. A ur\u010dit\u011b neud\u011bl\u00e1te chybu sklenic\u00ed <a href=\"https:\/\/eshop.sklizeno.cz\/okurky-670-g-p803417\">nakl\u00e1dan\u00fdch okurek<\/a> nebo <a href=\"https:\/\/eshop.sklizeno.cz\/berani-rohy-sterilovane-640-g-p106125\">beran\u00edch roh\u016f<\/a>, kter\u00e1 v\u00e1m do chu\u0165ov\u00e9ho koncertu vnese taky kyselost.<\/p>\n\n\n\n<h3 class=\"has-vivid-red-color has-text-color\"><strong>Klob\u00e1sa a pohanka<\/strong><\/h3>\n\n\n\n<p>Klob\u00e1sek na grilov\u00e1n\u00ed existuje cel\u00e1 \u0159ada, tak\u017ee t\u011bch kombinac\u00ed je mo\u017en\u00fdch ur\u010dit\u011b v\u00edc a vlastn\u011b bychom mohli ud\u011blat p\u00e1rovac\u00ed speci\u00e1l, kdy bychom ke ka\u017ed\u00e9mu chlebu od Kol\u00e1\u010dk\u016f dok\u00e1zali p\u0159i\u0159adit n\u011bjakou klob\u00e1sku. K testu jsme si vybrali D\u011bdovu klob\u00e1su z Miroslavi a tam n\u00e1m nejl\u00edp zafungoval <a href=\"https:\/\/eshop.sklizeno.cz\/bio-chleb-pohankovy-550-g-pN0502403\">Pohankov\u00fd chl\u00e9b<\/a>.<\/p>\n\n\n\n<h3 class=\"has-vivid-red-color has-text-color\"><strong>Raj\u010datov\u00fd chl\u00e9b k panence<\/strong><\/h3>\n\n\n\n<p>Par\u00e1dn\u00ed kombinace! <a href=\"https:\/\/eshop.sklizeno.cz\/chleb-rajcatovy-700-g-pN0500169\">Su\u0161en\u00e1 raj\u010data<\/a> jsou bohat\u00fdm zdrojem umami, jdou trochu do kyselkava a z\u00e1rove\u0148 do sladka. Je to komplex chut\u00ed a v\u016fn\u00ed. Ke snouben\u00ed jsme tedy vybrali n\u011bco decentn\u00edho, ale z\u00e1rove\u0148 d\u016fstojn\u00e9ho \u2013&nbsp;vep\u0159ovou panenku. Ale jo!<\/strong><\/h3>\n\n\n\n<p>I k burgeru jsme nakonec na\u0161li d\u016fstojn\u00e9ho par\u0165\u00e1ka z Kol\u00e1\u010dkovy pek\u00e1rny.
