Kr\u00e1sn\u011b ilustruje ten doslova fyzick\u00fd hlad po d\u0159\u00edve nedostupn\u00fdch potravin\u00e1ch. Ten ov\u0161em v\u00a0na\u0161ich novodob\u00fdch d\u011bjin\u00e1ch nevyvolala jen druh\u00e1 sv\u011btov\u00e1 v\u00e1lka, ale i\u00a0to, co p\u0159i\u0161lo po n\u00ed \u2013 tedy socialistick\u00e1 \u0161e\u010f, pr\u00e1zdn\u00e9 reg\u00e1ly a\u00a0centr\u00e1ln\u011b pl\u00e1novan\u00e9 hospod\u00e1\u0159stv\u00ed. Od okam\u017eiku, kdy jsme si na \u010deskoslovensk\u00fdch n\u00e1m\u011bst\u00edch vyzvonili kl\u00ed\u010di svobodu (kter\u00e1 se projevuje i\u00a0v\u00a0tom, jak\u00e9 j\u00eddlo si m\u016f\u017eeme koupit) upl\u00fdv\u00e1 v\u00a0t\u011bchto dnech 30 let. Poj\u010fme se za nimi ve zkratce ohl\u00e9dnout.<\/p>\n<h3>Socialismus na tal\u00ed\u0159i<\/h3>\n<p>Co se v\u00e1m vybav\u00ed, kdy\u017e se \u0159ekne <strong>osmdes\u00e1t\u00e1 l\u00e9ta v\u00a0gastronomii<\/strong>? N\u00e1m se jako tehdej\u0161\u00ed \u201esignature dish\u201c vybavilo \u010dtvrt kila pa\u0159\u00ed\u017esk\u00e9ho sal\u00e1tu se t\u0159emi rohl\u00edky. Samoobsluhy Pramen a\u00a0Jednota a\u00a0nab\u00edzely hojnost konzervovan\u00fdch potravin (p\u00e1rky, kr\u016ft\u00ed maso s\u00a0vejci, le\u010do atd.) a\u00a0zoufal\u00fd nedostatek \u010dehokoli \u010derstv\u00e9ho. Kdy\u017e p\u0159ivezli z\u00a0pek\u00e1rny chl\u00e9b, brali ho lid\u00e9 \u010dasto p\u0159\u00edmo z\u00a0peka\u0159sk\u00fdch bed\u00fdnek, p\u0159edv\u00e1no\u010dn\u00ed fronty na mandar\u00ednky, ban\u00e1ny nebo i\u00a0zelen\u00e9 kub\u00e1nsk\u00e9 pomeran\u010de jsou mezi pam\u011btn\u00edky pov\u011bstn\u00e9 dodnes.<\/p>\n<p>Mimochodem \u2013\u00a0nezapomn\u011bli jste, \u017ee obchody s\u00a0ovocem a\u00a0zeleninou byly v\u00a0t\u00e9 dob\u011b speci\u00e1lky, odd\u011blen\u00e9 od klasick\u00e9 s\u00e1mo\u0161ky? S\u00a0t\u00edm se poj\u00ed jedna hezk\u00e1 urban legend (ale t\u0159eba s\u00a0re\u00e1ln\u00fdm z\u00e1kladem), jak m\u011bl vedouc\u00ed jedn\u00e9 prodejny s\u00a0ovozelem probl\u00e9m se st\u00e1tn\u00ed polici\u00ed pot\u00e9, co mu na v\u00fdv\u011bsn\u00edm \u0161t\u00edt\u011b p\u0159estalo sv\u00edtit jedno p\u00edsmeno a\u00a0obchod tak fungoval pod ideologicky z\u00e1vadn\u00fdm n\u00e1zvem OVOCE Z\u00a0LENINA.<\/p>\n<p>Na j\u00eddeln\u00edch l\u00edstc\u00edch restaurac\u00ed a\u00a0j\u00eddelen neochv\u011bjn\u011b tr\u016fnily knedl\u00edky a\u00a0brambory, doprov\u00e1zen\u00e9 obvykle tenk\u00fdmi pl\u00e1tky masa s\u00a0univerz\u00e1ln\u00ed hn\u011bdou om\u00e1\u010dkou \u2013 zn\u00e1mou UHO. R\u00fd\u017ee byla od koleg\u016f soudruh\u016f z\u00a0\u010c\u00edny a\u00a0bor\u0161\u010d ze s\u00e1\u010dku od koleg\u016f soudruh\u016f ze Sov\u011btsk\u00e9ho svazu (na v\u011b\u010dn\u00e9 \u010dasy a\u00a0nikdy jinak!). Na objedn\u00e1vku v\u00a0lep\u0161\u00edch podnic\u00edch se daly po\u0159\u00eddit sma\u017een\u00e9 \u017eampiony nebo kv\u011bt\u00e1k, n\u011bkdy \u0159\u00edzek, v\u00a0hospod\u00e1ch pak dr\u0161\u0165kov\u00e1, gothaj s\u00a0cibul\u00ed a\u00a0octem. Pivo jednoho jedin\u00e9ho stylu (spodn\u011b kva\u0161en\u00e9 v\u00fd\u010depn\u00ed nebo le\u017e\u00e1k, maxim\u00e1ln\u011b tak sv\u011btl\u00e9 nebo tmav\u00e9), jedin\u00fdm d\u011blen\u00edm v\u00edna zase bylo na b\u00edl\u00e9 a\u00a0\u010derven\u00e9.<\/p>\n<p>Tak takhle n\u011bjak to vypadalo p\u0159ed 30 lety (dodejme, \u017ee autorovi t\u011bchto \u0159\u00e1dk\u016f bylo na podzim 1989 \u010derstv\u00fdch 10 let). Kdo v\u00a0t\u00e9 dob\u011b m\u011bl mo\u017enost vyjet na Z\u00e1pad a\u00a0srovnat nab\u00eddku, lezly mu o\u010di z\u00a0d\u016flk\u016f. Trouf\u00e1m si \u0159\u00edct, \u017ee kdyby m\u011bli v\u0161ichni \u010cechoslov\u00e1ci mo\u017enost vyjet za hranice a\u00a0pod\u00edvat se, jak\u00fd rozd\u00edl panuje v\u00a0nab\u00eddce obchod\u016f, v\u00a0tom, jak hezky \u010dist\u011b, uklizen\u011b a\u00a0hlavn\u011b barevn\u011b vypad\u00e1 u\u017e prvn\u00ed pohrani\u010dn\u00ed vesni\u010dka za \u017eeleznou oponou, mo\u017en\u00e1 by k\u00a0revoluci do\u0161lo mnohem d\u0159\u00edve.<\/p>\n<h3>Byly potraviny kvalitn\u011bj\u0161\u00ed?<\/h3>\n<p>\u010casto zazn\u00edv\u00e1, \u017ee potraviny byly d\u0159\u00edve kvalitn\u011bj\u0161\u00ed, na v\u0161echno byly normy a\u00a0nesm\u011blo se podv\u00e1d\u011bt. Fakt? Vid\u011bli jste, v\u00a0jak\u00e9m stavu dost\u00e1vali lidi sv\u016fj majetek v\u00a0restituc\u00edch po 40 letech, kdy ho vlastnil st\u00e1t, resp. socialistick\u00fd lid? Zch\u00e1tral\u00e9, zanedban\u00e9 domy, z\u00e1mky, statky, ve kter\u00fdch se celou dobu nes\u00e1hlo na \u00fadr\u017ebu? Takhle se nechov\u00e1 dobr\u00fd hospod\u00e1\u0159, kter\u00fd chce udr\u017eitelnou v\u00fdrobu. Jak asi musely vypadat v\u00fdrobn\u00ed linky v\u00a0dob\u011b, kdy v\u0161echno bylo v\u0161ech a\u00a0kdo nekradl, okr\u00e1dal rodinu?<\/p>\n<p>Dal\u0161\u00ed v\u011bc\u00ed zhor\u0161uj\u00edc\u00ed kvalitu tehdej\u0161\u00edch potravin bylo pou\u017e\u00edv\u00e1n\u00ed pesticid\u016f typu DDT a\u00a0dal\u0161\u00ed chemie. Jejich rezidua se dostala do rostlin, do ml\u00e9ka, do masa&#8230; Z\u00a0toho nelze p\u0159\u00edmo vinit socialistick\u00e9 hospod\u00e1\u0159stv\u00ed, takov\u00e1 prost\u011b byla doba \u2013 o\u00a0\u0161kodlivosti chemie v\u00a0zem\u011bd\u011blstv\u00ed se prost\u011b tolik nev\u011bd\u011blo. A\u00a0kdo v\u011bd\u011bl, nesm\u011bl mluvit. DDT se ve slo\u017een\u00ed v\u00fdrobk\u016f rozhodn\u011b neobjevovalo, to ale neznamen\u00e1, \u017ee nebylo v potravin\u00e1ch.<\/p>\n<p>A slo\u017een\u00ed? To byla v\u00a0minulosti mnohem kreativn\u011bj\u0161\u00ed polo\u017eka ne\u017e dnes. Vzpom\u00edn\u00e1m na vypr\u00e1v\u011bn\u00ed jednoho brn\u011bnsk\u00e9ho sl\u00e1dka: \u201eV druh\u00e9 polovin\u011b osmdes\u00e1t\u00fdch let st\u00e1t od \u010c\u00edny levn\u011b koupil velk\u00e9 mno\u017estv\u00ed r\u00fd\u017ee a\u00a0my jsme dostali za \u00fakol z\u00a0n\u011bj vyrobit pivo. Museli jsme kv\u016fli tomu m\u011bnit technologii, ale nakonec se n\u00e1m to povedlo. Ale na etiketu se r\u00fd\u017ee nikdy nedostala, proto\u017ee panovaly opr\u00e1vn\u011bn\u00e9 obavy, \u017ee \u010ce\u0161i by r\u00fd\u017eov\u00e9 pivo nepili.\u201c R\u00fd\u017ee je v\u00a0pivu sice netradi\u010dn\u00ed surovina, ale nen\u00ed nikterak \u0161kodliv\u00e1. Co\u017e se ned\u00e1 \u0159\u00edct o\u00a0spoust\u011b chemie, kter\u00e1 se do potravin p\u0159id\u00e1vala, ani\u017e by byla na etiket\u00e1ch uvedena. Dnes naopak mus\u00ed b\u00fdt uvedeno v\u0161e a\u00a0z\u00a0toho z\u0159ejm\u011b pramen\u00ed pocit, \u017ee jsou dne\u0161n\u00ed potraviny hor\u0161\u00ed kvality, ne\u017e byly d\u0159\u00edv.<\/p>\n<h3>Do\u017eeneme Z\u00e1pad! Do\u017eeneme Z\u00e1pad?<\/h3>\n<p>Touha \u201edohnat Z\u00e1pad\u201c byla snem, kter\u00fd byl na za\u010d\u00e1tku obdob\u00ed svobody pro mnoho lid\u00ed re\u00e1ln\u00fdm. Je pravdou, \u017ee ho taky \u0159ada politik\u016f slibovala. Hesla \u201eDo\u017eeneme N\u011bmecko a\u00a0Rakousko do 10 let\u201c z\u00edsk\u00e1vala t\u011bm, kdo je hl\u00e1sali, politick\u00e9 body a\u00a0hlasy voli\u010d\u016f. Z\u00a0dne\u0161n\u00edho pohledu v\u00edme, \u017ee to doh\u00e1n\u011bn\u00ed je \u010dasov\u011b mnohem n\u00e1ro\u010dn\u011bj\u0161\u00ed a\u00a0\u010d\u00edm bl\u00ed\u017ee jsme, t\u00edm pomaleji se p\u0159ibli\u017eujeme.<\/p>\n<p>Symbolem blahobytu se staly v\u00fdrobky, slu\u017eby a\u00a0firmy, kter\u00e9 byly d\u0159\u00edve tabu. Proto se houfn\u011b nakupovala Coca-Cola, a\u017e to m\u00e1lem st\u00e1lo \u017eivot Kofolu, kter\u00e1 se slavn\u011bj\u0161\u00ed \u010dernou limon\u00e1du v\u017edy jen sna\u017eila napodobit. Pro\u010d se spokojit s\u00a0kopi\u00ed, kdy\u017e si te\u010f m\u016f\u017eeme dop\u0159\u00e1t origin\u00e1l, \u017ee? Dal\u0161\u00edm v\u00fdznamn\u00fdm miln\u00edkem na poli \u201edoh\u00e1n\u011bn\u00ed Z\u00e1padu\u201c se stal p\u0159\u00edchod fastfoodov\u00e9ho \u0159et\u011bzce McDonald. Na za\u010d\u00e1tku 90. let snad nebyl v\u00fdrazn\u011bj\u0161\u00ed symbol z\u00e1padn\u00edho blahobytu. Otev\u0159en\u00ed prvn\u00ed \u010desk\u00e9 restaurace pod dv\u011bma \u017elut\u00fdmi oblouky v\u00a0pra\u017esk\u00e9 Vodi\u010dkov\u011b ulici prov\u00e1zela skoro slavnostn\u00ed atmosf\u00e9ra. A spousty, spousty lid\u00ed. Takov\u00fd gastronomick\u00fd ekvivalent koncertu Rolling Stones v\u00a0roce 1990 na Strahov\u011b, dalo by se \u0159\u00edct. (Autor se omlouv\u00e1 v\u0161em \u010dlen\u016fm skupiny za toto p\u0159irovn\u00e1n\u00ed, z pohledu symbolick\u00e9ho to ov\u0161em sed\u00ed.)<\/p>\n<p>V\u00a0Brn\u011b byl prvn\u00ed \u201eMek\u00e1\u010d\u201c otev\u0159en v\u00a0srdci m\u011bsta, na n\u00e1m\u011bst\u00ed Svobody, a\u00a0to na m\u00edst\u011b b\u00fdval\u00e9ho ml\u00e9\u010dn\u00e9ho baru. (Do ml\u00ed\u010d\u0148\u00e1ku se chodilo na chleb\u00ed\u010dek, um\u011blohmotn\u00fd z\u00e1kusek typu indi\u00e1nek nebo \u0161pi\u010dka a\u00a0na jahodov\u00fd koktejl, kter\u00e9mu bychom dnes nejsp\u00ed\u0161 \u0159ekli milkshake. Atmosf\u00e9ru dokreslovaly vysok\u00e9 stoly vyz\u00fdvaj\u00edc\u00ed ke konzumaci \u201ena stoj\u00e1ka\u201c.)<\/p>\n<h3>Hlavn\u011b a\u0165 je toho pln\u00fd tal\u00ed\u0159!<\/h3>\n<p>Snad nikde jinde nebylo heslo zmi\u0148ovan\u00e9 v\u00a0\u00favodu (D\u0159\u00edv jsme nemohli, te\u010f m\u016f\u017eem!) vid\u011bt tak markantn\u011b jako v\u00a0restaurac\u00edch. Po dob\u011b pr\u00e1zdn\u00fdch reg\u00e1l\u016f nastala doba pln\u00fdch tal\u00ed\u0159\u016f. Hodn\u011b hranolek, hranolky ke v\u0161emu, hranolky i\u00a0ke sma\u017een\u00e9mu s\u00fdru, frit\u00e9zo, je\u010f! Pak taky bramborov\u00e9 krokety a\u00a0dal\u0161\u00ed z\u00e1zraky\u00a0 modern\u00ed gastronomie, kter\u00e9 v\u00a0kuchyn\u00edch putovaly po trajektorii mra\u017e\u00e1k\u2013fri\u0165\u00e1k\u2013tal\u00ed\u0159. A\u00a0obloha! Proto\u017ee zelenina je zdrav\u00e1, \u017eejo. Tak\u017ee otev\u0159eme konzervy a\u00a0vraz\u00edme na tal\u00ed\u0159 l\u017e\u00edci sterilovan\u00e9 kuku\u0159ice, l\u017e\u00edci b\u00edl\u00fdho a\u00a0l\u017e\u00edci \u010derven\u00fdho sterilovan\u00fdho zel\u00ed\u2026 No a\u00a0t\u0159eba trochu mrkve. V\u0161e ozdob\u00edme nezbytn\u00fdm pl\u00e1tkem pomeran\u010de, proto\u017ee \u2013 ano, je to tu zas \u2013\u00a0d\u0159\u00edv jsme nemohli, te\u010f m\u016f\u017eem! A\u00a0trad\u00e1 na st\u016fl.<\/p>\n<p>Fine dining to m\u011bl p\u0159ed 30 lety t\u011b\u017ek\u00e9. Ale to m\u011bl koneckonc\u016f i\u00a0p\u0159ed lety dvaceti a\u00a0deseti. Dodnes se m\u016f\u017eete setkat s\u00a0koment\u00e1\u0159i typu \u201eJ\u00eddlo dobr\u00fd, ale porce jak pro vrabce,\u201c nebo \u201eJe\u0161t\u011b \u017ee naproti restaurace XY maj\u00ed hladov\u00fd okno s\u00a0p\u00e1rkama v\u00a0rohl\u00edku.\u201c P\u0159ece jen je jednodu\u0161\u0161\u00ed (a taky na prvn\u00ed pohled viditeln\u011bj\u0161\u00ed) doh\u00e1n\u011bt bohat\u00fd Z\u00e1pad kvantitou ne\u017e kvalitou.<\/p>\n<p>D\u016fle\u017eit\u00e9 je, \u017ee diskuse o\u00a0kvalit\u011b potravin, jejich p\u016fvodu a\u00a0etice je u\u017e n\u011bjakou dobu doslova na stole. Mimochodem \u2013 Sklizeno pat\u0159\u00ed u\u017e od sv\u00e9ho zalo\u017een\u00ed v\u00a0roce 2011 mezi aktivn\u00ed diskutuj\u00edc\u00ed. Nez\u016fst\u00e1v\u00e1me p\u0159itom jen u\u00a0slov. Investujeme do biopotravin a\u00a0nov\u00fdch technologi\u00ed p\u011bstov\u00e1n\u00ed a\u00a0chovu, podporujeme mal\u00e9 lok\u00e1ln\u00ed producenty kvalitn\u00edho j\u00eddla, m\u00e1me vlastn\u00ed v\u00fdrobu, kde z\u00a0kvalitn\u00edch surovin va\u0159\u00edme a\u00a0pe\u010deme j\u00eddla pln\u00e1 chut\u00ed. A\u00a0m\u00e1me <a href=\"https:\/\/www.sklizeno.cz\/kodex\">Kodex kvality<\/a>, kter\u00fd n\u00e1s zavazuje, \u017ee nekvalitn\u00ed j\u00eddlo prod\u00e1vat nikdy nebudeme.<\/p>\n<p>Tak, ale te\u010f zase zp\u00e1tky k\u00a0t\u00e9matu.<\/p>\n<h3>Pion\u00fd\u0159i sv\u011btov\u00fdch chut\u00ed<\/h3>\n<p>U\u017e jsme zmi\u0148ovali, jak v\u00fdznamnou roli p\u0159i otev\u00edr\u00e1n\u00ed o\u010d\u00ed hraje cestov\u00e1n\u00ed. Cesty se prodlu\u017eovaly, po V\u00eddni a\u00a0Mnichov\u011b p\u0159i\u0161ly na \u0159adu Pa\u0159\u00ed\u017e, \u0158\u00edm, Barcelona, Lond\u00fdn, New York, Bangkok, Tokio\u2026 Vedle pam\u00e1tek (a\u00a0t\u0159eba levn\u011bj\u0161\u00ed a\u00a0dostupn\u011bj\u0161\u00ed elektroniky) v\u00a0nich \u010ce\u0161i a\u00a0Slov\u00e1ci objevovali taky m\u00edstn\u00ed kuchyni, p\u0159\u00edpadn\u011b rovnou pestrou sm\u011bsici kuchyn\u00ed v\u0161ech n\u00e1rod\u016f, kter\u00e9 v\u00a0dan\u00e9m m\u00edst\u011b \u017eij\u00ed. Co\u017e se t\u0159eba ve zmi\u0148ovan\u00e9m Lond\u00fdn\u011b nebo New Yorku rovn\u00e1 okru\u017en\u00ed cest\u011b kolem sv\u011bta.<\/p>\n<p>Postupem \u010dasu se vlivy sv\u011btov\u00fdch kuchyn\u00ed za\u010daly objevovat i\u00a0u\u00a0n\u00e1s. Za\u010dalo to snad t\u00edm, \u017ee jsme se nau\u010dili va\u0159it t\u011bstoviny ne dom\u011bkka a\u00a0slizovita jako kol\u00ednka, ale hezky italsky al dente. P\u0159estali jsme si na n\u011b sypat strouhan\u00fd eidam a\u00a0l\u00edt ke\u010dup, ale zjistili jsme, \u017ee existuj\u00ed s\u00fdry typu Grana Padano a\u00a0bolo\u0148sk\u00e9 rag\u00fa. Po brn\u011bnsk\u00e9m porevolu\u010dn\u00edm fenom\u00e9nu \u201ePizza\u201c na \u010cesk\u00e9 (kter\u00fd b\u016fhv\u00edpro\u010d funguje dodnes) se za\u010daly objevovat prvn\u00ed skute\u010dn\u00e9 pizzerie. A\u00a0to byl jen za\u010d\u00e1tek. Dnes jsou v\u00a0\u010desk\u00fdch m\u011bstech vietnamsk\u00e1 bistra nab\u00edzej\u00edc\u00ed (t\u00e9m\u011b\u0159) autentickou vietnamskou kuchyni, dostanete japonsk\u00e9 sushi, americk\u00e9 burgery, argentinsk\u00e9 steaky, paraguaysk\u00e9 mat\u00e9, kebaby, falafely a\u00a0hummusy z\u00a0bl\u00edzk\u00e9ho v\u00fdchodu a\u00a0samoz\u0159ejm\u011b pochoutky z\u00a0cel\u00e9 Evropy od Norska po Maltu a\u00a0od Cabo de Roca po Ural. Ne v\u0161echno n\u00e1m chutn\u00e1 a\u00a0v\u00a0n\u011b\u010dem z\u016fst\u00e1v\u00e1me konzervativn\u00ed, ale roz\u0161i\u0159ov\u00e1n\u00ed gastronomick\u00fdch obzor\u016f pokra\u010duje dodnes.<\/p>\n<p>Sou\u010dasn\u011b s\u00a0t\u00edm (znovu)objevujeme tak\u00e9 kr\u00e1sy \u010desk\u00e9, moravsk\u00e9, slezsk\u00e9 a\u00a0dal\u0161\u00edch kuchyn\u00ed, \u010dasto pozapomenut\u00fdch lidov\u00fdch recept\u016f ze v\u0161ech mo\u017en\u00fdch mikroregion\u016f, ze kter\u00fdch modern\u00ed gastronomie \u010derp\u00e1 a\u00a0na kter\u00fdch se (tu \u00fasp\u011b\u0161n\u011b, tu m\u00e9n\u011b \u00fasp\u011b\u0161n\u011b) stav\u011bj\u00ed food koncepty restaurac\u00ed a\u00a0bister. T\u00fdk\u00e1 se to nejen gastronomie, ale i\u00a0v\u00fdroby potravin.
