Jedna skupina vol\u00e1: \u201eDo be\u010dky!\u201c, zat\u00edmco druh\u00e1 kontruje ry\u010dn\u00fdm: \u201eDo hrnce!\u201c V\u00fdsledky t\u011bchto boj\u016f b\u00fdvaj\u00ed v ka\u017ed\u00e9 dom\u00e1cnosti jin\u00e9. Spole\u010dn\u00e9 je pro n\u011b jedin\u00e9 \u2013 pora\u017een\u00e1 strana je p\u0159evelice smutn\u00e1.<\/span><\/p>\n<p class=\"p1\"><span class=\"s1\">Letos je po n\u011bkolika ne\u00farodn\u00fdch letech \u0161vestek tolik, \u017ee se p\u0159\u00edznivci slivovice i povidel mohou rozej\u00edt sm\u00edrn\u011b \u2013\u00a0ka\u017ed\u00fd se sv\u00fdm d\u00edlem trnkov\u00e9ho nad\u011blen\u00ed. A je\u0161t\u011b zbyde na knedl\u00edky.<\/span><\/p>\n<p class=\"p1\"><span class=\"s1\">Po t\u00e9to chv\u00e1le v\u0161estrannosti pou\u017eit\u00ed \u0161vestek se vra\u0165me k povidl\u016fm. \u010c\u00edm si to vlastn\u011b rozva\u0159en\u00e9 sl\u00edvy z\u00edskaly to privilegium, aby se jim \u0159\u00edkalo povidla a ne marmel\u00e1da nebo d\u017eem, jako je tomu u v\u0161ech ostatn\u00edch ovocn\u00fdch druh\u016f? Nau\u010dn\u00e9 knihy (a <a href=\"https:\/\/cs.wikipedia.org\/wiki\/Povidla\"><span class=\"s2\">Wikipedie<\/span><\/a>) n\u00e1m vysv\u011btluj\u00ed, \u017ee povidla se \u201ena rozd\u00edl od marmel\u00e1d a d\u017eem\u016f \u2026 tradi\u010dn\u011b vyr\u00e1b\u011bj\u00ed bez p\u0159\u00eddavku cukru va\u0159en\u00edm ovoce a\u017e do zahu\u0161t\u011bn\u00ed nebo vyp\u00e9k\u00e1n\u00edm na pek\u00e1\u010di\u201c. <\/span><\/p>\n<p class=\"p1\"><span class=\"s1\">Aha \u2013 tak\u017ee terminologii bychom m\u011bli. Co te\u010f ale s receptem? Z\u00e1sadn\u00ed, vpravd\u011b hamletovsk\u00e1 ot\u00e1zka p\u0159i p\u0159\u00edprav\u011b povidel zn\u00ed: M\u00edchat, \u010di nem\u00edchat? Na internetu najdete p\u0159ehr\u0161el recept\u016f, jejich\u017e auto\u0159i p\u0159\u00edsahaj\u00ed na obr\u00e1zky Ji\u0159\u00edho Sl\u00edvy a loutky Ji\u0159\u00edho Trnky, \u017ee se va\u0159e\u010dkou k hrnci nep\u0159ibl\u00ed\u017e\u00ed ani na p\u016fl n\u00e1mo\u0159n\u00ed m\u00edle. \u201eNemus\u00edte se b\u00e1t, prost\u011b se to nep\u0159ip\u00e1l\u00ed!\u201c Jin\u00ed zase tvrd\u00ed, \u017ee poctiv\u00e1 povidla bez p\u016fldenn\u00edho kvedl\u00e1n\u00ed v hrnci vyrobit nelze.<\/span><\/p>\n<p class=\"p1\"><span class=\"s1\">A proto jsem si \u0159ekl, \u017ee se v\u00ed\u0159e \u201enem\u00edcha\u010denk\u016f\u201c pod\u00edv\u00e1m na zoubek. Na po\u010d\u00e1tku m\u00e9ho po\u010d\u00edn\u00e1n\u00ed samoz\u0159ejm\u011b st\u00e1l jeden jedin\u00fd \u0161vestkov\u00fd stromek, kter\u00fd se letos rozplodil do d\u0159\u00edve nev\u00eddan\u00e9 produkce. Vlastn\u011b jsme si a\u017e do leto\u0161n\u00edho roku nebyli stoprocentn\u011b jisti, jak\u00e9ho je ten ko\u0161at\u00fd strom v rohu zahrady vlastn\u011b druhu, \u0161vestky na n\u011bm posledn\u00ed roky nebyly \u017e\u00e1dn\u00e9. Letos n\u00e1m to vynahradil. Du\u0161uje se, \u017ee se povidla nemusej\u00ed m\u00edchat a \u017ee se nep\u0159ip\u00e1l\u00ed. Va\u0159il jsem z polovi\u010dn\u00ed d\u00e1vky oproti receptu (tedy ze 3 kg, v\u00edc se mi do p\u011btilitrov\u00e9ho hrnce neve\u0161lo) a p\u0159ip\u00e1lil jsem. T\u00edm nechci \u0159\u00edct, \u017ee \u0160\u00e1r\u010din recept nefunguje, ale mn\u011b nefungoval. Z\u0159ejm\u011b m\u00e1 lep\u0161\u00ed hrnec. Po jednom dal\u0161\u00edm pokusu jsem se dostal ke sv\u00e9 verzi jej\u00edho receptu. Suroviny jsem nechal tak, jak jsou, jen jsem m\u00edrn\u011b upravil postup.<\/p>\n<h3><strong>\u0160vestkov\u00e1 povidla (skoro) podle Gurm\u00e1nky<\/strong><\/h3>\n<p><em>Ingredience:<\/em><\/p>\n<ul>\n<li>3 kg \u0161vestek<\/li>\n<li>0,5 kg cukru (hn\u011bd\u00e9ho)<\/li>\n<li>125 ml octa balsamico<\/li>\n<li>l\u017ei\u010dka sko\u0159ice<\/li>\n<li>slivovice na &#8222;dezinfekci&#8220;<\/li>\n<\/ul>\n<p>&nbsp;<\/p>\n<p><em>Postup:<\/em><\/p>\n<ul>\n<li>Vypeckovan\u00e9 \u0161vestky dejte do hrnce, prosypte cukrem a p\u0159elijte octem. Zah\u0159\u00edvejte st\u0159edn\u00edm plamenem (j\u00e1 m\u00e1m indukci a zah\u0159\u00edval jsem na stupni 7). Jakmile se budouc\u00ed povidla za\u010dnou va\u0159it, m\u00edchn\u011bte je\u0161t\u011b jednou, aby se na dn\u011b nic nep\u0159ipeklo, st\u00e1hn\u011bte v\u00fdkon na n\u00edzk\u00fd a \u0161vestkovou sm\u011bs t\u00e1hn\u011bte pod pokli\u010dkou jako v\u00fdvar. Nebojte se d\u00e1t jim klidn\u011b 5 hodin. M\u016f\u017eete pro kontrolu m\u00edchnout. Pot\u0159ebujete m\u00edrn\u00fd st\u00e1l\u00fd var, aby do\u0161lo k odpa\u0159en\u00ed vody a t\u00edm zahu\u0161t\u011bn\u00ed povidel. N\u011bkdo m\u00e1 r\u00e1d hust\u0161\u00ed, n\u011bkdo tekut\u011bj\u0161\u00ed, tak\u017ee v\u00fdsledn\u00e1 doba redukce je na v\u00e1s. Mn\u011b to trvalo asi 30 minut. P\u0159ed koncem p\u0159idejte l\u017ei\u010dku mlet\u00e9 sko\u0159ice (ale nemus\u00edte). M\u016f\u017eete m\u00edrn\u011b mixnout ponorn\u00fdm mix\u00e9rem, ale po t\u011bch p\u011bti hodin\u00e1ch ta\u017een\u00ed jsou \u0161vestky kr\u00e1sn\u011b rozva\u0159en\u00e9 a nen\u00ed to pot\u0159eba.<\/li>\n<li>Mezit\u00edm si p\u0159ipravte skleni\u010dky. Postavte na v\u00ed\u010dko a nechte vychladnout.<\/li>\n<\/ul>\n<p>&nbsp;<\/p>\n<h3><strong>100% pe\u010den\u00e1 povidla<\/strong><\/h3>\n<p>Tahle metoda je je\u0161t\u011b m\u00e9n\u011b pracn\u00e1, ale znamen\u00e1 trochu v\u00edc n\u00e1dob\u00ed. I kdy\u017e \u2013 pokud pou\u017eijete pe\u010dic\u00ed pap\u00edr, tak vlastn\u011b ne. Na 100% povidla mus\u00ed b\u00fdt \u0161vestky 100% zral\u00e9, m\u011bkk\u00e9, sladk\u00e9. Ne nadarmo \u010dekali p\u0159edkov\u00e9 se sklizn\u00ed do prvn\u00edch rann\u00edch mraz\u00edk\u016f, kter\u00e9 chu\u0165 zkoncentrovaly. Letos by se \u0161vestky mraz\u00edk\u016f nedo\u017eily.<\/p>\n<p><em>Ingredience:<\/em><\/p>\n<ul>\n<li>\u0161vestky<\/li>\n<\/ul>\n<p>&nbsp;<\/p>\n<p><em>Postup:<\/em><\/p>\n<ul>\n<li>Troubu rozpalte na 120 \u00b0C (ide\u00e1ln\u011b na horkovzduch).<\/li>\n<li>Rozp\u016flen\u00e9 vypeckovan\u00e9 \u0161vestky vyskl\u00e1dejte vedle sebe na pe\u010dic\u00ed pap\u00edr na plech a vlo\u017ete do roztopen\u00e9 trouby. Pe\u010dte 90 minut.
