Jak usp\u011bl? A\u00a0jak se kakaov\u00e9 boby po sklizni zpracov\u00e1vaj\u00ed?<\/span><\/p>\n<h5><b>M\u00e1\u0161 za sebou cestu po st\u0159edn\u00ed a ji\u017en\u00ed Americe. Kde v\u0161ude jste byli?<\/b><\/h5>\n<p><span style=\"font-weight: 400\">Nejd\u0159\u00edv jsme nav\u0161t\u00edvili Belize a tamn\u00ed fermenta\u010dn\u00ed stanici Maya Mountain, kter\u00e1 vykupuje kakao od m\u00edstn\u00edch potomk\u016f maysk\u00fdch indi\u00e1n\u016f. A tak\u00e9 na vlastn\u00ed k\u016f\u017ei poznat p\u0159\u00edb\u011bh kakaov\u00fdch bob\u016f \u00fapln\u011b od za\u010d\u00e1tku. U\u017e n\u011bjakou dobu na soci\u00e1ln\u00edch s\u00edt\u00edch p\u00ed\u0161eme, \u017ee vyr\u00e1b\u00edme \u010dokol\u00e1du od kakaov\u00e9ho bobu po hotovou \u010dokol\u00e1dovou tabulku (anglicky bean to bar). Te\u010f budeme schopn\u00ed vyr\u00e1b\u011bt stylem tree to bar (ze stromu po tabulku). (sm\u00edch)<\/span><\/p>\n<p><span style=\"font-weight: 400\">Byla to na\u0161e prvn\u00ed cesta a jsme z toho hodn\u011b nakopnut\u00ed. Nechceme toti\u017e jen d\u011blat tu nejlep\u0161\u00ed \u010dokol\u00e1du, hled\u00e1me zp\u016fsob, jak cel\u00e9mu na\u0161emu po\u010d\u00edn\u00e1n\u00ed d\u00e1t hlub\u0161\u00ed smysl. A ten spo\u010d\u00edv\u00e1 v tom, \u017ee skrze kvalitn\u00ed produkty, kter\u00e9 budou m\u00edt lidi r\u00e1di, ud\u011bl\u00e1me n\u011bco pro producenty kakaa a tak\u00e9 pro celou na\u0161i planetu. Osobn\u011b jsem si tento stav, tuto filozofii pojmenoval tripleWin \u2013 n\u00e1\u0161 z\u00e1kazn\u00edk je spokojen\u00fd s produktem a t\u00edm, co je za n\u00edm, my d\u00edky z\u00e1kazn\u00edkovi m\u016f\u017eeme podnikat dal\u0161\u00ed kroky, jeliko\u017e vytv\u00e1\u0159\u00edme p\u0159im\u011b\u0159en\u00fd zisk, a farm\u00e1\u0159 je za svoji pr\u00e1ci l\u00e9pe ohodnocen a t\u00edm i v\u00edce motivov\u00e1n k jej\u00edmu neust\u00e1l\u00e9mu rozvoji a zlep\u0161ov\u00e1n\u00ed.<\/span><\/p>\n<h5><b>Jak jste se dostali pr\u00e1v\u011b do Ekv\u00e1doru?<\/b><\/h5>\n<p><span style=\"font-weight: 400\">Spolupracujeme s organizac\u00ed Ekv\u00e1dor na dlani, co\u017e je projekt \u010ce\u0161ky Mark\u00e9ty Pi\u0161kov\u00e9 a jej\u00edho ekv\u00e1dorsk\u00e9ho man\u017eela Jos\u00e9ho. D\u00edky nim jsme se dostali pr\u00e1v\u011b k Serviovi Pachardovi, co\u017e je zpracovatel kakaa a mimochodem tak\u00e9 univerzitn\u00ed profesor, tak\u017ee o kakaov\u00fdch bobech, jejich p\u011bstov\u00e1n\u00ed a zpracov\u00e1n\u00ed v\u00ed \u00fapln\u011b v\u0161echno. A sv\u00e9 zku\u0161enosti p\u0159ed\u00e1v\u00e1 dal\u0161\u00edm p\u011bstitel\u016fm.<\/span><\/p>\n<p><span style=\"font-weight: 400\">V Ekv\u00e1doru n\u00e1s zaujala p\u016fvodn\u00ed n\u00e1rodn\u00ed odr\u016fda kakaa, kter\u00e1 se jmenuje Arriba Nacional. Kdy\u017e to srovn\u00e1m t\u0159eba s t\u00edm v\u00ednem, tak moravsk\u00fd vina\u0159 m\u016f\u017ee dohl\u00ed\u017eet na kvalitu suroviny ka\u017ed\u00fd den. Ale jak\u00fd vliv m\u00e1te na kvalitu vy, kdy\u017e se va\u0161e surovina p\u011bstuje tis\u00edce kilometr\u016f od m\u00edsta, kde \u010dokol\u00e1dy vyr\u00e1b\u00edte?<\/b><\/h5>\n<p><span style=\"font-weight: 400\">Tohle je samoz\u0159ejm\u011b velk\u00fd o\u0159\u00ed\u0161ek. Ale sna\u017eili jsme se to o\u0161et\u0159it ne jedn\u00edm, ale hned n\u011bkolika mechanismy. Na prvn\u00edm m\u00edst\u011b jsou \u2013 jak jinak \u2013\u00a0pen\u00edze. Za boby plat\u00edme zhruba t\u0159ikr\u00e1t v\u00edc, ne\u017e je obvykl\u00e1 cena. Jednak to souvis\u00ed s t\u00edm, co jsem \u0159\u00edkal p\u0159ed chvilkou \u2013\u00a0\u017ee chceme d\u011blat n\u011bco pro producenty \u2013 a jednak za tu cenu po\u017eadujeme prvot\u0159\u00eddn\u00ed kvalitu. Je to z\u00e1rove\u0148 motiva\u010dn\u00ed faktor.<\/span><\/p>\n<p><span style=\"font-weight: 400\">Jako dal\u0161\u00ed opat\u0159en\u00ed jsme zavedli lep\u0161\u00ed obal pro lodn\u00ed p\u0159epravu. Podob\u00e1 se vakuov\u00e9mu pytl\u00edku, ve kter\u00e9m se uchov\u00e1v\u00e1 k\u00e1va, sm\u011brem zevnit\u0159 ven je prody\u0161n\u00fd, ale zvenku dovnit\u0159 je hermeticky uzav\u0159en\u00fd. Akor\u00e1t tenhle n\u00e1\u0161 pytl\u00edk je na pades\u00e1t kilo kakaa. (sm\u00edch) Pokud v\u00edm, jsme jedni z\u00a0prvn\u00edch, kte\u0159\u00ed takov\u00e9 obaly pro lodn\u00ed transport kakaa pou\u017e\u00edvaj\u00ed.<\/span><\/p>\n<p><span style=\"font-weight: 400\">No a v neposledn\u00ed \u0159ad\u011b m\u00e1me p\u0159\u00edmo na m\u00edst\u011b \u201ev\u00fdstupn\u00edho kontrolora\u201c. Je j\u00edm pr\u00e1v\u011b Jos\u00e9 z\u00a0Ekv\u00e1doru na dlani. Jak se v tropick\u00e9 Americe kakao p\u011bstuje?<\/b><\/h5>\n<p><span style=\"font-weight: 400\">Je velk\u00fd rozd\u00edl v p\u011bstov\u00e1n\u00ed na plant\u00e1\u017ei, kde se p\u011bstuje komoditn\u00ed kakao, a na tzv. permakulturn\u00ed farm\u011b. Kdy\u017e p\u011bstuje\u0161 na plant\u00e1\u017ei, mus\u00ed\u0161 hodn\u011b st\u0159\u00edkat \u2013 proti pt\u00e1k\u016fm, proti \u0161k\u016fdc\u016fm\u2026 Na permakulturn\u00ed farm\u011b spole\u010dn\u011b rostou rostliny stejn\u011b jako v d\u017eungli \u2013\u00a0ve \u010dty\u0159ech patrech. \u00dapln\u011b dole roste tr\u00e1va, n\u00edzk\u00e9 rostliny a byliny. Nad nimi jsou men\u0161\u00ed stromy, co\u017e je mimo jin\u00e9 pr\u00e1v\u011b kakaovn\u00edk. Nad nimi Servio p\u011bstuje manga a ban\u00e1ny, pap\u00e1je a dal\u0161\u00ed ovoce. No a posledn\u00ed, nejvy\u0161\u0161\u00ed patro tvo\u0159\u00ed vysok\u00e9 stromy.<\/span><\/p>\n<h5><b>Co jste se dozv\u011bd\u011bli o kakaovn\u00edku?<\/b><\/h5>\n<p><span style=\"font-weight: 400\">Je to ovocn\u00fd strom. Kakao tak m\u00e1 druhov\u011b mnohem bl\u00ed\u017e k v\u00ednu ne\u017e t\u0159eba k o\u0159\u00ed\u0161k\u016fm. Kakaov\u00e9 boby, kter\u00e9 zpracov\u00e1v\u00e1me, jsou vlastn\u011b pecky z du\u017einy, kter\u00e9 se \u0159\u00edk\u00e1 baba (vyslovuje se b\u00e1ba, pozn. red.). Zaj\u00edmav\u00e9 je, \u017ee plody nevyr\u016fstaj\u00ed na v\u011btv\u00edch, ale rostou p\u0159\u00edmo z kmene. Od zasazen\u00ed rostlinky kakaovn\u00edku do prvn\u00ed sklizn\u011b uplyne p\u011bt let. Kakao je hodn\u011b z\u00e1visl\u00e9 na kvalit\u011b p\u016fdy, jej\u00ed kyselosti a vlhkosti okol\u00ed. Je t\u0159eba hodn\u011b podm\u00ednek, kter\u00e9 se mus\u00ed potkat v ide\u00e1ln\u00edm pom\u011bru, aby vyrostlo dobr\u00e9 kakao.<\/span><\/p>\n<h5><b>Co se s kakaem d\u011bje po sklizni?<\/b><\/h5>\n<p><span style=\"font-weight: 400\">Plody se rozseknou a vyjme se baba. Ta se sv\u00e1\u017e\u00ed do fermenta\u010dn\u00edch z\u00e1vod\u016f. Tam surovina dostane d\u00edky fermentaci typickou chu\u0165. P\u016fvodn\u00ed chu\u0165 \u010derstv\u00e9 \u010dokol\u00e1dov\u00e9 bobule je hodn\u011b sv\u00edrav\u00e1, fermentace rozv\u00edj\u00ed \u010dokol\u00e1dovou chu\u0165 a proteiny a eliminuje sv\u00edrav\u00e9 silice.<\/span><\/p>\n<p><span style=\"font-weight: 400\">Servio m\u00e1 vlastn\u00ed zp\u016fsob fermentace. Jde vlastn\u011b o divokou fermentaci, tedy o metodu podobnou t\u00e9, kterou pou\u017e\u00edvali sta\u0159\u00ed indi\u00e1n\u0161t\u00ed v\u00fdrobci \u010dokol\u00e1dy. Pak se boby p\u0159em\u00edst\u00ed do speci\u00e1ln\u00edch d\u0159ev\u011bn\u00fdch beden uspo\u0159\u00e1dan\u00fdch do t\u0159\u00ed pater. Prvn\u00ed dva dny jsou boby v prvn\u00edm, nejvy\u0161\u0161\u00edm pat\u0159e a po dosa\u017een\u00ed spr\u00e1vn\u00e9 teploty jsou p\u0159em\u00edst\u011bny o patro n\u00ed\u017ee, aby byla zachov\u00e1na rovnom\u011brn\u00e1 fermentace. O dal\u0161\u00ed den pozd\u011bji jdou do posledn\u00edho nejni\u017e\u0161\u00edho patra na dal\u0161\u00ed cca den. Cel\u00fd proces je kontrolovan\u00fd a zm\u011bny se prov\u00e1d\u00ed v\u017edy, kdy\u017e teplota uvnit\u0159 beden dos\u00e1hne ur\u010dit\u00e9 hodnoty. <\/span><\/p>\n<h5><b>A pak je hotovo?<\/b><\/h5>\n<p><span style=\"font-weight: 400\">Kdepak! Po fermentaci se kakao su\u0161\u00ed. To trv\u00e1 dal\u0161\u00edch zhruba deset dn\u00ed. Su\u0161\u00ed se nejd\u0159\u00edve v takov\u00fdch pyramidov\u00fdch \u0159\u00e1dc\u00edch, kde je\u0161t\u011b dob\u00edh\u00e1 fermentace. Potom se boby rozprost\u0159ou na africk\u00e9 postele, na jak\u00fdch se su\u0161\u00ed i k\u00e1va. D\u016fle\u017eit\u00e9 je boby ka\u017ed\u00fd den dvakr\u00e1t t\u0159ikr\u00e1t p\u0159evr\u00e1tit, aby su\u0161en\u00ed bylo rovnom\u011brn\u00e9. Cel\u00fd proces zpracov\u00e1n\u00ed od sklizn\u011b k expedici tak trv\u00e1 mezi 16 a 20 dny. Je n\u011bjak\u00fd rozd\u00edl mezi Serviem a\u00a0konvenc\u00ed?<\/b><\/h5>\n<p><span style=\"font-weight: 400\">Nav\u0161t\u00edvili jsme pr\u016fmyslovou fermenta\u010dn\u00ed stanici Fortaleza. A mus\u00edm \u0159\u00edct, \u017ee hned prvn\u00ed dojem byl \u0161patn\u00fd\u00a0\u2013 v\u0161ude tam byla c\u00edtit pl\u00edse\u0148. Tak\u017ee se mi potvrdilo, pro\u010d konven\u010dn\u00ed \u010dokol\u00e1dovny musej\u00ed pra\u017eit boby \u00fapln\u011b do\u010derna. Je pot\u0159eba jednak zab\u00edt pl\u00edse\u0148 a jednak p\u0159eb\u00edt nep\u0159\u00edjemnou pachu\u0165. To my na\u0161t\u011bst\u00ed d\u011blat nemus\u00edme a na\u0161e \u010dokol\u00e1dy tak maj\u00ed autenti\u010dt\u011bj\u0161\u00ed a doufejme, \u017ee pro z\u00e1kazn\u00edky i lep\u0161\u00ed chu\u0165.<\/span><\/p>\n<h5><b>Co v\u00e1s ve st\u0159edn\u00ed a ji\u017en\u00ed Americe nejv\u00edc p\u0159ekvapilo?<\/b><\/h5>\n<p><span style=\"font-weight: 400\">Nejv\u011bt\u0161\u00ed \u201eWow!\u201c pro n\u00e1s v Ekv\u00e1doru byl kontrast mezi t\u00edm, jak je zem\u011b bohat\u00e1 na v\u0161echny mo\u017en\u00e9 suroviny, a jak\u00e1 chudoba tam mezi lidmi je! St\u00e1le je to pro mne hodn\u011b t\u011b\u017ece pochopiteln\u00e9. Je fakt dobr\u00e9 ob\u010das vystr\u010dit nos z Evropy a uv\u011bdomit si, jak se tu m\u00e1me dob\u0159e.
